GOODe & Healthy-"fried" Chicken

With all the holiday yumminess and the calories that come with it, the Goodes lightened things up a bit with this family favorite twist on fried chicken...

We like to call it GOODe & Healthy-fied -"fried" Chicken 'round these parts ;)

It is a great way to lighten things up without losing all the yummy flavor of great fried chicken AND it is super easy... which is another plus during these crazy holiday days!

You start by removing the skin from a 10 pk of chicken thighs.

You can buy them skinless (and boneless), but if the holidays have your budget stretched as it is, buy up the inexpensive thighs and grab a pair of kitchen shears and cut the skin off yourself :)

Now it is time to set up your dunkin' station. Take a small bowl and add 3 egg whites.

Grab your favorite bread crumbs. We use Panko--they are super crunchy and very yummy.

Place about 2 cups inside a baggie.

Now dunk your bird in your bird bath ;)

Then toss into your baggie and toss around

Then place in the 9 x 13 pans, salt and pepper to taste, and bake at 350 degrees for 30-40 minutes or until juices run clear (internal temp 170 degrees)

Perfect crunchy shell and perfectly juicy inside--just like fried chicken-- except a lot less calories and fat.

Enjoy!
