Goode & Gooseberry Project: Chicken and Dumplings

Thankful Project: My pal Terra over at A Life Fit For A King recently challenged folks to post one thing a day they are thankful for everyday this month... and I am gonna try to play along. You are welcome to join along on your blogs and Facebook statuses. So, before one post a day, I will try to remember to write about something I am thankful for:

Nov. 1:
I am thankful for a God that loves me and His grace that welcomes me back from the distance that I created.

Tonight's Goode & Gooseberry Patch Project Recipe is Chicken and Dumplings.

Start by heating up 1 T Olive Oil in a dutch oven

And brown ya up some chicken strips seasoned with salt and pepper

Once browned, sprinkle with 2 T of flour...

No picture because I forgot this step until the very end... : /

Add 1 Cup Water and 1 (14 oz) Can of Broth

1 Cup Green Beans (Mine are from my canning stash ;) )

1 Chopped Onion

1 Cup Shredded Carrots

Mix 'er up and bring to a boil. Simmer for 3 minutes.

Now grab 2/3 cup Bisquick and toss in a bowl

Add 1/3 Cup Corn Meal

And 1/4 Cup Shredded Cheddar

Mix in 1/2 Cup Milk

Now drop in batter 1 T at a time

Cover and cook up for 10-12 minutes.

Yum! This was a lot different than my biscuit based dumplings. A nice switch up... also, love the veggies.
