The other day Miss Add and I were in a fall mood decided to make some Pumpkin Pancakes now that we have pumpkin on our grocery store shelves... HALLELUJAH!
So I grabbed some Bisquick and pumpkin and gots down to business.
We took 2 cups Bisquick...
And 2 t of Pumpkin Pie Spice
And mixed 'er up with 1 egg white and 1 cup water
Then I should have placed them on a hot buttered griddle...
This is what it looks like when you forget the butter because despite your best efforts you just ain't perfect...just sayin'
Fear not, I found my butter and got things back on track...
Once your cakes are done, grab an adorable assistant and some cookie cutters...
This is a GOODe little set from Wilton (in the cake decorating aisle) that is chock-full of family fun for only $10!
We chose to use black cats and spooky moons for this special recipe!
Mama then realized we were fresh out of syrup... oh well-- not a huge fan of it anyhow. Truth be told mama can be seen eating her pancakes, French toast and waffles without any syrup at all most days ;)
But then I gots to flippin' through the book I've been living with lately ;) Gooseberry Patch's Mom's Favorite Recipes and saw this recipe for Pumpkin Dip and thought it would be good with our cakes...
It was so super easy... it is dangerous... seriously. Dieters beware.
You just take an 8 oz. block of room temperature cream cheese.
Add 1/2 cup of pumpkin
Mix 'er up and add 1/2 Cup Powdered Sugar, 1/2 Cup Brown Sugar and 1 1/2 t of Pumpkin Pie Spice
Mix 'er up again
Now heat in the microwave in 30 second intervals until smooth and creamy and serve up with some black cats and spooky moons ;)
Oh and grab that cute assistant for a taste test...
Now for those of you concerned about all that wasted pancake from cookie cuttin'... haven't you heard about the delicacy known as "Mommy Bites"?
It's all the rage 'round these parts... just sayin'
