Goode & Gooseberry Project: Favorite Corn Casserole


This Goode & Gooseberry Patch Project Recipe-- Favorite Corn Casserole-- made its debut at the Benefiel Thanksgiving table this year, begrudgingly replacing Cris' Spoon Bread, an all time favorite recipe of my own.



Committed to my goal of cooking through Gooseberry Patch's Mom's Favorite Recipes, I decided it didn't make since NOT to use the Gooseberry Patch recipe and check it off my list since it was similar to my tried and true recipe.



Dear Reader, I am soooo glad I did--as was the family. This version is creamier and yummier and let's just say Cris' Spoon Bread will likely not be heard from again... she pales in comparison and knows it. She is off hangin' her head in shame...just sayin'


This gem of a recipe has all of the ingredients of the predecessor, except one (which I added). However, the amount of some of the ingredients is a little different... and that dear reader, made all the difference!

This is one of those awesome dump it in and mix it up recipes. You start with our pal Jiffy Mix


1 Can Creamed Corn and 1 Can Corn (drained)



1 Egg


1 Cup Sour Cream


1/4 Cup Melted Butter



1/4 Cup Sugar


Now mix'er up and pour into a greased 9 x 13 pan.

Bake at 350 degrees until golden and a toothpick comes out clean.

Depending on your oven this could take anywhere from 30 minutes to 1 hour. Don't over-bake or under-bake... I know, I know.... the pressure. It will be worth it... promise!


Psst... That piggie sign in the background says "I think I ate my will power"... ;)

    10 GOODe Thoughts:

    Yum - this is my yearly Thanksgiving dish. Love to bring home an empty dish. The one good thing about adding 1 stick of butter I never grease my pan and I mix all the ingredients in the pan so there is one less dish to clean!!! Only difference is I use 2 eggs and no sugar since the Jiffy Mix is much sweeter than other brands. It is hard to know when it is done though! Your blog is great.

    The first thing I noticed in the pic was Mom's willpower pig! hahaha

    Yep, that is the recipe we use too!! Yummy!

    Looks good. We could make a lot of this in Wisconsin this year. Seems like every spare inch of soil was planted in corn this year!

    We use a similar recipe also. It is a bit healthier (from back in our WW days), but is still good!

    1 box Jiffy Corn mix
    1 cup light sour cream
    1/2 cup egg beaters
    1 cup reduced fat shredded cheddar cheese

    Seriously it is good.
